Roman pizza: temperature and cooking time
Here it is worth distinguishing between two families, because they do not use the same temperatures or cooking times.
Roman round pizza (thin and crispy), in a dedicated or professional oven: usually 300-330°C for approximately 2-3 minutes. Compared with Neapolitan pizza, the temperature drops by as much as 100-150°C. The dough is less hydrated and thinner: at excessively high temperatures, the edges burn before the centre is cooked, so you need high but controlled heat, with enough time for the heat to penetrate the entire thickness.
Roman pizza by the slice / pizza in a pan: longer cooking and less of a “flash” bake. This is where the temperature ranges from the Roman Pizza Regulations come into play, designed for a different process from the fast-baked round pizza:
- Deck temperature: approximately 300-320°C, depending on the oven
- Ceiling temperature: approximately 200°C
- Cooking time: 8-13 minutes, depending on hydration and toppings

Pizza in a pan: temperature and cooking time
250-300°C for 6-10 minutes, depending on thickness: here the logic is reversed, with a lower temperature and a longer cooking time. The greater thickness of the dough requires heat that is less aggressive but applied for longer. With excessive heat, the surface can brown while the inside is still raw.
Pizza in pala: temperature and cooking time
300-320°C for 5-6 minutes: pizza in pala sits somewhere between Neapolitan pizza and pizza in a pan. It needs enough heat to develop a good crust, but not so much that it risks burning an elongated dough that is thinner than a traditional pan pizza.
Contemporary pizza: temperature and cooking time
400-420°C, with slightly longer cooking times than classic Neapolitan pizza: highly hydrated doughs with very long maturation times benefit from slightly more moderate heat. The dough is delicate, and excessively aggressive heat can burn the surface before the very hydrated interior has finished cooking.
