5. Can I get more information on the cooking base?
The cooking base consists of a refractory stone that has the technical name of ” biscotto ”. This type of stone allows for uniform cooking and avoids the formation of large burns, especially on the base of the pizza when using high temperatures (350 ° C – 500 ° C). The oven is supplied by standard with this unique ” biscotto” refractory stone, which comes from the best Italian producers. Since the production is artisanal, the ” biscuit ” stone has a thickness of between 2 and 2.5 cm and does not have a smooth appearance. These variable characteristics do not compromise in any way the cooking of food. Each ” biscuit ” refractory stone is certified for food use

All cleaning operations must be carried out with the oven off, then remove the plug from the socket and wait for the oven to cool down. Carry out the pyrolysis process by which all food residues, fats and encrustations present in the cooking chamber of the oven are incinerated. At the end of the process, with the oven cold, just wipe with a slightly damp cloth to remove the ash residues that have settled on the ” biscuit ” refractory stone. To carry out this procedure, the oven thermostat must be brought to a temperature of 500 ° C for 15 minutes Avoid using aggressive cleaning products that contain chlorine and its diluted solutions, caustic soda, abrasive detergents, muriatic acid, bleach, or other products that can scratch or grind.
